I don't know yet I just had the idea a day ago. Everything you suggested sounds great. Maybe rest stops too since I want to travel to visit family. I'm converting a van soon and thought running a business out of it would be a good idea. I live in socal so the beach is good. I could travel to different cities too.

Problem is that the selection will be way too limited for most people and small delis/liquor stores are already all over the place. Food trucks can still be profitable even tho it's oversaturated.

Basically anything ethnic and not too mainstream will be a money machine

I can cook simple meals but I've never made ethnic food before. What about a mobile coffee shop? I have worked as a barista before so I have some experience. Will keep the the ethnic food in mind though thanks for the ideas. I still kind of like the convenience store idea. Maybe I can go to places where there isn't much around for people to choose from. Like desert areas and sell drinks and snacks.
