it stakes automatically if you open your wallet and it isn't encrypted
if its encrypted, you need to unlock it and click the "just for staking" or something box

You can't yet. I'm guessing they'll allow it once they release a definitive version of the wallet (current one is a pre-release)

the stake field doesn't show how much you are staking, you are staking the entire wallet, it just shows the staking reward being processed if you got any
