What does /biz/ think of the intrinsic value theories? Are they garbage? Or do they have some truth to them?

Intrinsic value matters. Coins that are able to reduce transaction costs have higher intrinsic value, therefore they are more likely to go up.
Don't believe anyone who tells you that cryptocurrencies don't have intrinsic value. They have the potential to make economic transactions and contracts much cheaper.

IMHO There's more to money then that. I think being able to transact easily is value in itself.
Just imagine a software company released a new software product called "BankCoin" This software product is able to remove all transaction software, all tellers, all retail rental costs, and is still able to perform the main functions of a bank.
Surely this software would have some intrinsic value - probably as much intrinsic value as the bank it replaces.
