I would just put it on GDAX and sell for fiat. Tax-wise there is no real difference between USD and USDT, it just *might* be easier to avoid paying taxes with USDT.

If you get something pegged to USD, it's going to be stable but could go literally to 0 if the company goes insolvent. If you get something not pegged but still pretty stable, it's still going to be tied to BTC's volatility because most volume (outside of a few very rare exceptions like maybe ETH) occurs via BTC instead of fiat currencies.
