I have 115k RDD. I got a generated staking reward yesterday and it started the process all over again wit waiting for coins to mature for 8 hours. Shouldn't me original 115k stay matured and the new coins have to mature? Or do I have to repeat this process every time get a staking reward?

you don't need to keep the wallet open except "before" you sell.
Your coins gain age, and that's the only important part
I saved my coins for 3 years, then I got then to stake very quickly (cause they were super old) several times.
They will give you X% a year regardless.
To stake them you need to open the wallet, yes, but you don't gain more by keeping it open forever.
