Using a run of the mill gaming ring you're actually not going to draw on as much electricity as you're thinking. The electricity bills are worrying when setting huge AISICs that require specialized cooling and such. Still, mining BTC for example is a fruitless effort, as this field has been overtaken by Chinese tycoons long ago. You can mine ETH with that GPU, won't get so much and they're going to fork into PoS (i.e no mining, only staking) soon. Still, you can grab some dozen coins to get yourself started. You can also mine ZEC after the ETH fork happens, and all the jokecoins like DGB as well. Do realize you'll never make as much profit as if you had a dedicated machine (will take months turned on almost 24/7 for reasonable amounts), or if you actually invested and played the stocking game.
About mining itself, it amounts to solving cryptography puzzles in most cases. You're basically using your PC to solve very elaborate calculations and, with that, you generate a hash (that is named and, quite literally, a Proof of Work or PoW) that fills into the blockchain (which is the equivalent of an ideal ledger containing every single transaction of the currency in question). Naturally, this equals currency being generated.
