Do you think I can list cryptocurrencies as a source of income on an apartment application?
I'm not sure if it would hurt my case or help it, because I don't have any statements I can show for my gains.
I can only estimate how much I make a week.

I would doubt it, but don't take my word for it. You can start a business though and pay yourself that way to show them how much money you actually make.
