Like any other exchange out there.
You put your order, if there's a matching order of the oposite type which matches your bid or is better (lower price to buy, higher price to sell) it sets you up with that order. If not your order goes to the book and waits until it gets matched.

The orders for a certain price tag get priority based on who put it up first.
Any time someone tries to fill a buy/sell order for a certain price, the oldest one is used.
If it is not enough to fill the order, the next oldest one is used, and so on
Basically every time you delete and remake your order you're kicking yourself back to the very back of the line
