Because individual crypto coins actually exist, while fiat is basically just a pool of debt.
Crypto and the hashing algorithms have created a 'trustless' way to transfer money or 'value'.
Banks, governments and large institutions stand in the middle as the 'trusted' party in any fiat transaction. Remove the requirement for trust and you remove the requirement for institutions.
