I want to open up a little store that sells Gunpla and Anime figures but I'm not sure where to even start?
I live in Canada, in a town called Mississauga, a bit away from Toronto, if this info helps at all.

As someone who collects a bunch of useless shit, ask yourself how many of those hobby shops you've seen come and go because their shit is overpriced af.
Might be easier for you in a more Metropolitan city like Toronto, but fuck if you'll even make rent every month, man.

I'll say this tho, if you're serious about it, look up other hobby shop enthusiasts who have reasonable models.
Look up Alpha Investments on youtube, overall all p cool guy and he's doing a play-by-play on opening a MTG/Card shop atm.
Granted, he's probably going to be successful because he has experience, a large internet presence, etc., but it might be a good jumping off point.

Nigga, there was one in Square One that went under. They didn't do just gunpla and figs, but even with that and other models they weren't making enough.
