Sometimes people do accidentally leave the store without paying.
For some places, you could say they gave you incorrect amount of change. If they prove they didn't, you can say it was your mistake.

I've stolen about $3000 worth of stuff from some high class places but I don't want to reveal how I do it out fear that it becomes mainstream.

If the security team is any good at all and not playing candy crush on their phones behind the monitors you will be caught. Although I admit thieves can pull some clever stunts at times.

Here's a list of things not to bother with:
1) Tin foil lined bags (oldest trick in the book).
2) Passing alarm triggering baskets/carts back to accomplice after passing gates.
3) Passing gates with personal coiled cabling to mask elements hidden on person.
4) Stuffing desired item into other item and having accomplice do a quick switch and walk out with similar item.
5) Entering naked under a coat, dressing up with desired items with elements cut out of fabric (you WILL be asked to strip again).
