Why don't employers let people bid on jobs? Like literally give a job to whoever paid them the most money? This would decrease unemployment and simplify the hiring process.

they kind of do already. think about it, they'll never pay you more than they think you're worth to them, only less. how much less depends on how much less you are willing to take. this is discussed in advance and is similar to "giving up" money in order to get hired.
of course you don't always go with the cheapest bid, you judge on reputation, skills, etc.
