I am 23, graduating college, and have a job lined up.
I have never had a credit card. I didn't look that much into it but when I did try to apply for one, I was rejected on the basis of having no income (being a full-time student). Yet I see many other colleagues with credit cards. How is this possible and what did I miss out on?

You dodged a bullet. Avoid credit at all costs. Fuck "building muh credit". Buy a house with 20 percent down and you'll be fine, ideally more.

Freedom land? The have to be options for people without income where the limit is just not as high. My creditcard has a 100 euro daily limit since I don't have any income but I can transfer money on the card manually and then it's x+100 euro.
