No matter the hours I work and slave away, I can't seem to keep my funds/savings to escalate the way I would want.
Would a chart, journal, an app, or just lock everything into savings and starve be the best???
Automate transfers into a savings account. Whether it's $25 or $100 a paycheck, it will start to add up. Learn to live without that extra $50 and stop being poor.

Figure out your needs. Put 10% on top of that into a "lux spendings" account that you get to treat yourself with. Put the rest into bond funds (that way they are locked for a couple of days if you need them). Then shuffle into stocks when it's enough to overcome the commission on trade. Diversify, keep a log. Don't get shilled
