It's always been my dream to have my own food truck business. Problem is I don't know shit about the business side of it. I know its very important before I just dive in and buy a truck. Any advice?? I just like cooking.

Go work for a food truck for 1 year. Learn everything and take notes.
It is literally that simple.

Don't pull a Doobie's Dog House - look up RIGHT NOW if it's legal to have a food truck in your state/city/whatever. Some prevent them.
In any event:
There are a LOT of guides online about starting one up, including this: http://foodtruckempire.com/how-to/costs/
All make it very, very clear that it is phenomenally expensive up-front, that you need to worry about permits/health/etc., and that it's a major risk. Even though you might not know anything about the business side of it, go freakin' learn - you could end up $100k+ in debt very quickly unless you get that shit squared away.
And that's not even talking about all the crazy regulatory crap people have to deal with:

What a lot of people don't realize is that even doing something you love, turns into sucking really quickly when you have to do it at a high level for 40 - 50 hours a week.
I like working on cars. I don't want to be a mechanic.

Yeah I could quite easily see this happening, my parents had a fast food shop in a good location, were very busy, doing at most 1.2k per day, usually on a Friday night.
They sold up and thought "we'll just open another one when we move", now sometimes they do like $7 a day, maybe $250 on a good day.
