Honestly? Gunsmithing.
Only two/three schools in the US do it, aside from self-paced DVD-based stuff.
All the old gunsmiths are dying out, and folks are buying more guns than ever, even here in California, especially with the incoming legislation.
Gets really busy in the shops when the panics hit, and if you go around with a gunsmithing degree you'll definitely get hired on somewhere.

Learn machining. How to run a lathe and use a mill, CNC or manual.

Energy motherfucker, oil&gas , clean, solar whatever. Thats where the moneys at
the harbor pilots here in new york city make over $300k a year, so I'd say that's a pretty good trade. However it's a 12 year apprenticeship and good luck getting into it.
The ones in Houston make even more, they're close to 400.
