i've never heard of any canadian universities

Don't know of any. Don't know anyone that knows of any. Never met someone who went to one, or wanted to. Don't know of anyone famous that went to one.
Depends which ones. UBC, UofT, and McGill are all top 50 universities in the world.
Really depends if you're an American planning on coming to Canada, or vice versa.
As a Canadian in the US, I can say that Canadian universities are not perceived. They have neither positive or negative connotations, it's like putting your degree without saying where you went

A university out of ice bricks would be damned impressive. I wasn't aware Canadian technology had come that far.

It's like that webm where the dude says he doesn't think about you at all.

I would presume primarily through sight, sound, and touch. Universities might also have a distinctive smell but it's not required. I think that gay serial killer/cannibal is probably the only person who has tasted a Canadian university.
