That's your problem here. No healthy investment will bring you substantial returns "fairly quick", unless you're very lucky.

Quick returns imply you're into scams or gambles.

Sound investments such as stocks, bonds, ETFs... work on compound interest (which are very slow but bring huge returns in the end), not on get-rich-quick schemes.

I'd say to do what you did to get your first thousand. Only do it quicker. That will speed things up for you.
