Imagine post scarcity utopia hits in the year 2100. Robot Amazon Prime delivers the needs of earth's society from mars and robots harvest minerals from the universe to satisfy our needs.

A large part of the population would probably go NEET. Everybody might sit at home playing Rape Simulator 2095, the last MMO ever created, for a hundred years, because nobody ever bothers to learn code again. Until a religious charity knowledge cult decides to learn the ancient techniques to craft Paradise 1.0, where people share relatively virtuous ideas, and then a member of their group goes rogue and hacks both Rape Simulator and Paradise into a vanity Arnold Slavery Simulator or whatever

The various shows stated or implied people worked more for enjoyment than payment. There were still unsolved problems-- like various diseases, and how to make planets and solar systems livable on stellar timescales, and dealing with outside threats, and building more efficient or effective versions of things that already existed, and creating new things, and finding out what all is even out there in the universe and what happened in our past and before we were around. One of the problems, which also kind of hurts what they were going for, was that some things were too complex or too delicate to replicate. Also the whole universe wasn't like the Federation, nor the whole galaxy, not even just the section with the Federation in it, so there was trade with other societies to consider, and some people lived on the fringes of the Federation or other interstellar societies and didn't get the full "post-scarcity" thing going on.
All things considered I think it's a pretty realistic depiction of what it would be like-- much better than now, but with some rough edges.
As for economy specifically... as long as there are things of value, people will want those things, but I think it would some ways be unlike any economy as we know it.

you can't expand on what a post-scarcity economy would be like, because it would be exactly like our own. you can only answer what a post-scarcity culture would be like, and that's a spiritual question, a question of what people truly desire
