I used the realm forums at the start of Legion when there were some options but it might be more difficult now. Depends what you're looking for though, mine is filled with older players who were hardcore around vanilla or tbc so are skilled but don't play much. You'd find the opposite in guild finder or trade chat if you want more casual play like levelling characters or doing dungeons.

That's definitely a problem with modern WoW. That kind of guild you described sprung up around cata as a gold generator from level perks. People get invited to those from a script so there's never any sense of community.
Your best bet is probably to join a guild that raids but advertises as recruiting socials.

I don't think so unless they're part of the connected realm on your server. They've merged low pop servers over time and connected others from a bigger AH so you can join guilds within those specific realms.
But on group finder you can join groups or raids across all the servers listed for whatever kind of group content people advertise. So it's a lot easier to get groups together for things now, especially at off-peak times.

Well if I were you I'd visit Chiang Mai in Thailand again,a beatiful city,relatively cheap,great cuisine,nice people,loads of buddhist culture and for thai standards not many tourists,Vietnam is quite similar to it but I haven't been there yet.
eorgia has superb nature and some very nice castles and skiing pists if you are into that kind of stuff.
