Start with a good cut. My favorites are Ribeye, Porterhouse, and of course Filet Mignon. Let the steaks sit out prior to cooking. The closer to room temperature when they hit the grill, the better. Mix together equal parts of salt, pepper, garlic powder, onion powder and paprika; enough to season both sides of the steaks. Use charcoal, not gas. Start with a very hot, mature coal fire, and clean grill grates. Put down your steaks for 4 minutes on one side, flip, and go 2-3 minutes on the other side for rare, or 4 minutes on the second side for medium rare. If you go any warmer than medium rare, you've fucked it up. Let the steaks rest 5 minutes before cutting.

For extra fanciness, get a steak that has some fat attached, such as a NY Strip. Cut away all of the fat and meat, from the outside, leaving only the "eye" of the steak. separate most of the fat from the trimmed meat, and chop it to the consistency of hamburger. Put it in a non-stick pan, and cook until you have a LOT of fond built up. Then, add a cup of diced shallots, and stir until the shallots are soft. Add 2 cups of red wine, and let reduce until you can see the bottom of the pan when stirring. Add 2-3 cups of chicken broth. Turn the heat to low, and let simmer for about 1 hour. Strain the contents of the pan. You now have a tasty bordelaise sauce. Finish with a pad of butter before pouring over steaks.

Let acclimatise to room temperature for 30 mins before cooking.

Preheat oven to low heat.

Cast iron skillet, season steaks liberally with salt & pepper both freshly ground.

Very high heat on the skillet with a very little amount of either coconut, grapeseed or sesame oil . Fillets 4.5 minutes per side, others 3 minutes per side.

Once cooked, throw in diced onions to the pan while steaks go onto a heated plate in the oven.

Brown onions and drop out onto another oven plate. Then drop in a handful of red/green peppercorns with a knob of butter to the pan and use a flat wooden spatulate to scrape all the caramelised fat back up.

Drop in some chopped button mushrooms, let them brown and soak up the fats/pepper then drop to a very low heat, take the pan off the heat and let the mushrooms relax.

Once the mushrooms let the flavours back out, drop back onto the low heat with a splash of milk, a generous helping of cream, and a handful of hand-shredded wild mushrooms.

Let that soak, scrape pan bottom again.

Finally get a seperate saucepan, drop in a quarter bottle of Drambuie once is very hot and let it flame, then scrape the mushroom/cream mixture in, add a little more ground black pepper.

Steaks out, new heated plates, sauce seperately.

Best accompanyment is BIG baking potatos chopped into huge chips about 3x3x8cm, boil for 10 mins, shake to distress, spray with olive oil repeatedly, brushed with sesame oil and cooked 10 mins per side then stacked like Jenga.

Step 1: buy a good thick steak, from a butcher, not a supermarket. The cut depends on your taste, a fillet steak is very tender, but little to no flavour, a bavette or skirt steak is full of flavor but tough (and would need tenderizing), sirloin is good if you're not a fan of fat, and ribeye is the king of steaks.

Step 2: Make sure that steak you picked is dry-aged. The longer the better usually, but between 30 and 60 days is the sweet spot, any longer and you'll get a cured meat flavor, which you may or may not like.

Step 3: Take that steak out of its wrapper as soon as you get home, and pat it dry with kitchen towels, and season both sides with freshly ground black pepper and salt.

Step 4: place this seasoned steak on a wire rack so air can circulate around it, and place in your fridge. Leave the steak there for 3 days, turning once a day

Step 5: Take the steak out of the fridge, and use a blowtorch to sear the entire outside & edges

Step 6: Place steak into a 50 degrees C oven, using an oven thermometer to ensure 50c is maintained. Leave this steak in the oven for 12 hrs (this tenderizes the meat).

Step 7: time to cook this fucker. Take your steak out of the oven, and allow to come back to room temperature. Get a heavy cast iron pan, place it on the highest heat your stove top can handle, and leave it there to heat up for 30min. The pan should be screaming hot.

lightly oil the steak with olive oil (or groundnut oil, its got a higher smoke temp), and place into the pan. Flip the steak every 15-20 seconds to form an amazing crust. Cook until your steak is 5degrees C away from your ideal temp (52c for rare 55c for medium), use a probe to get it spot on.

Step 8: Resting. Rest your steak for half the time you cooked it +2min. This relaxes the proteins & allows the steak to hold on to its juices better.

Step 9: serve the steak with a side of iceberg lettuce & tomato salad (or rocket & watercress), top the steak with a blue cheese butter.

The perfect steak.

My recipe is to get a sirloin, which is my favourite cut.

Let it rest till room temp, then pat it dry.

Put a knob of butter, some Oregano, and some garlic(I generally use the preminced stuff) into a pan, and cook that shit for a bit, till the garlic is nice and soft, and everything is decent looking. and warm. Then spread that out and put your steak on it. Flip at 3 minutes, and get a nice sear, you're hoping for a Medium Rare, maybe a bit on the rare side.

Plate the steak, and pour over the melted butter,Oregano and Garlic mixture, then let it sit for a few minutes to finish cooking, and to let the juices git gud.

I usually eat mine with fries so that when the steak is done I just smear the fries in the steak juices and such. Pretty good.

I use that hipster ass Pink salt shit purely because it's the only salt I can find that I can grind myself.

Also use black pepper.

I grind the fuck out of some salt, and rub it in, then do very large black pepper grinds, like... You want as large pieces as you can get, tastes good man.

sous vide is a great way to cook steak if you dont know how to cook steak. I sous vid all kinds of meat, chicken/fish/duck//lamb/pork/etc, and sous vide works brilliantly. But I've tried most cuts of steak sous vide, I always get better results with a cast iron pan & a probe. Sous vide is a fantastic thing, but its not for everything. Just as tuna or scallops don't benefit form sous vide.

That said, thats just my opinion, and if you're cooking your steaks sous vide, you're cooking them better than 90% of the steak eating population. So, +1 from a fellow sous-vider
