The camera isn't perpendicular to its trajectory, so you're only seeing its movement from side to side (relative to you) but not from back to forward.

Think of it like there's a target 1 mile in front of you, and someone to your right shoots it.
If he's an inch from you, the bullet is going to look still (you'd only see the ass of it getting progressively farther away), while if he's a mile to your right, you're gonna see it move at half its speed because it would be angled at 45 degrees, and the closer the angle between you and the trajectory gets to 90, the more accurate your sight of its speed will be (since at 90 degrees it will be perpendicular and you'll be seeing it from the side).
