It's no secret that NASA enhances photos for a more pleasurable appearance. originals are available afaik, if you're interested in them.

Photos taken of space do not show stars, originally. the exposure has to be edited for the stars to appear, so in essence along with whatever is in focus, like the earth or any other celestial.

It's a consequence of how digital cameras work, at least as far as the separate RGB images go. The individual elements can only detect brightness, not color. In normal, consumer-level digital cameras, the sensor element has a special mask on it that is essentially combined red, green, and blue filter, with each nearby pixel capturing a different color. The upside of this is that you only need one exposure to capture a full-color image. The downside is that you cut your resolution into a third (or worse) of what the sensor is actually capable of. Since telescope cameras are very much concerned with detail (and typically have little to no motion in their images), they either toss the filter entirely and just capture a grayscale image, or they take multiple photos with different, monochromatic filters.
