It's kinda situational.

If I have some fruit and wine, then definitely gouda. Sliced apple with gouda washed down with some cheap white wine is a patrician-tier meal.

As far as cheeses for making sauces go, I always pick a sharp cheddar, especially a sharp white cheddar. Tastes good with spices/seasonings, easy to melt, and tastes great when you wash a good cheddar sauce down with beer.

3yo fruity Comté… Laguiole… Munster…

But Livarot/Roquefort always on top in general.
(Anyway, a good Pont-l'Évêque or a good *real* Camembert, can be better than an average Livarot, for ex. Depends on circumstances…)
