The ISS goes around the Earth several times a day and you can find the schedule online. It's not that hard to know where and when to look for yourself.

With the naked eye, sure. So does the ISS. You can see the specks of planes at high altitude in broad daylight, but not the ISS, even though the ISS is far more reflective. So its distance does make a difference.

These images are taken with telescopes, which could resolve a plane in much greater detail than what you see here.

Because the Moon is close enough to Earth for gravity to make it so that it travels around Earth the same rate as it turns (I think that's how tidal locking works)

When you have a planet or moon in a picture reflecting the brightest object for several thousand light years it will be very hard to get a camera that can see the stars in that type of fore lighting. Correct. Well, more specifically, objects in the foreground are too bright.

It's important to remember that at night on Earth, Earth is blocking the sun. So in night time photography on Earth, you have to take in a lot more light for stuff to visible anyway, which means stars are well within the range. If you want to take a picture of the moon without it being blown out, however, the stars are no longer visible in that exposure.

But in space, it's like endless daylight with a dark sky. If you don't the other stuff to be completely blown out, like the moon in night time photography, then you have to set an exposure where the stars simply aren't bright enough to be seen.

The human eye works differently and astronauts can see the stars, but cameras, even really good ones, have a far more narrow exposure. If you could see the stars in your viewfinder before, you won't be able to now.

Then you'll understand how cameras work and why you don't see stars in normal space photography.
