Music is not arbitrary. The composer chose those notes because they meant something to the composer, metaphorically or literally. Notes do have meaning, these meanings are still being sculpted out but its very much a language and certainly not arbitrary. "Noise" is the word you're looking for.

It's also definitely not escapism, I'd say listening to good music is an introspective experience which is the antithesis of escapism. I hope you can see the sympathetic beauty of music some day.
