I get morbidly curious about everything, so I read about everything, particularly insane things like this.

Out of many accounts, supposedly like pork but more fibrous. It's a pink/white meat. Rather than red.

Foul porkchops or something according to writing on the subject. Humans and some other hominids seem to have chemical compounds in their flesh that make them taste awful, apparently an added bitter/putrid flavor. I think human cannibalism is more an act of ritual or revenge. Not many predators seem to actually enjoy human meat, sharks in particular will spit out human limbs out of, apparently, disgust.

If this is merely chemical happenstance or a genuine passive evolutionary defense I can't say.

This isn't because of taste, it's because humans have a much higher bone-to-meat ratio than most of the other things sharks eat (fish, seals, other sharks). Sharks have pretty much the same reaction to most large mammals.

They also tend to quit as soon as something starts hitting back because they aren't looking for a fight; after their prey gets bit it'll bleed to death then they can eat it, and if it doesn't, it's not worth tangling with.

Finding a shark with human remains actually inside of it is like finding a four-leaf clover, we're similar enough to sea lions they think they're biting into. Even lion attacks end with a largely unconsumed corpse, the only predator which seem to eat and digest humans without issue are very large constrictor type snakes - most victims are children because they are small enough to swallow but adults have been found completely digested by constrictors. I'm fairly sure the bitter/putrid compound is some kind of nitrogen based acid. Another piece of evidence is that African bushmen consider the meat of large apes to be an acquired taste really only enjoyed by adult men, a typical human comment of bitter or pungent foods.

one time i picked up a tig welding rod by the wrong end after i had taken off my gloves. left a nice sear mark along my palm. of course my first reaction was to suck on the wound because of the pain. tasted really gamey like venison but fattier. maybe a little like duck. idk. it didn't taste bad. I would advise against eating people though it would be very easy to get diseases from them.
