That'd be my general rule of thumb, but I think it depends on the cut. If it's something ultra lean it might be helpful Anything outside of that though, no. There is generally enough fat content that olive oil is a waste of time; also generally any liquid is going to create steam and you don't want that either.

Now that everyone knows skirt or flank are used for fajitas it's somehow inexplicably costs more than sirloin, and not even as good.

With the current pricing of skirt/flank, it doesn't make sense to use it in fajitas, if you're gonna marinate it a bit use thin slivers of round steak (if you marinate for a few hours it should be good but unmarinated round will be shoe leather) or, for better fajitas, sirloin.

Flank/skirt has priced itself out of the market.

Some combo of the following.

>Garlic powder
>Olive oil
>butter
>kosher salt
>pepper
>worcestershire sauce
>montreal seasoning

Put all that on it and some type of liquid marinade (italian, olive oil, or worcestershire sauce) and let sit UNCOVERED in the fridge for 2 days. It will get crusty and look gross but that will turn into crisp yummy goodness on the outside of the steak. You're basically giving it a two day aging period in the marinade, some guys actually do this for weeks (most steakhouses do, that's why the seasoning tastes so much better than what you do at home).

Use a few of those ingredients or all and it should be good. Best results come from a charcoal grill, but a propane grill or george foreman can be solid too.

Also, different degrees of done-ness are better for different steaks. For a heavily marbled steak it's going to be both crisp and juicy if it is done at least medium. A medium ribeye will have the fat liquify within it making it juicy. On less fatty steaks like sirloin I prefer rare-medium rare.

In my butcher shop, we have dry age as hanging around +35 days, and yes. You need to cut the very dry/rotten meat off, and then you have the most tasty meat ever. Only touch the heater for a couple of min and salt, thats it.

The key to a good steak pan fry is you DON'T FUCK WITH IT. You flip it exactly once and leave the steak untouched, this gives you a good crusty bit on the outside like you grilled it rather than the gray plain result of a panfry fail (someone who flipped and moved it repeatedly). You season it up. Put some butter where the steak will sit. Plop it down. Cook for 2 and a half to 3 minutes, flip once and cook for 2 and a half to 3 on the other side.... then it should be done with a nice crusty finish on both sides....

but if you're always fucking with it and flipping it results will be shittier.

Kind of like flatiron steaks. They used to be the shit butchers threw away or took home because of the seem of silver skin down the middle you can't really take out, if you do you're pretty much just left with two 1/4 slivers of meat. Then people realized, yeah it's kinda chewy which you can mitigate with cutting/cooking correctly but it is never going to be "tender", however it does taste amazing. You used to catch that shit for like 2.99 a pound, now it's like a buck a pound cheaper than fucking ribeye or kc/ny strip.

Another suuuuuuper underrated cut that was a butchers secret with the chuck-eye steak. It's a little section that's only a few inches long where the ribeye transitions into the chuck. All the flavor of the chuck, with all the fatty tenderness of a ribeye, they're basically mini-ribeyes. Again you used to find them like 2.99 a pound, again now they're the price of ribeye/strip

As far as skirt steak goes? I always marinade it overnight or longer in a mixture of lime juice and the juice from a jar or pickled jalapenos. Pat off the excess with some paper towles, let it come to room temp, salt/pepper and a little Chipotle mrs. Dash, throw it on the grill and seer the shit out of it for just a couple mins each side, wrap it up, let it rest, slice thin, serve with sautéed p & o on some tortillas and whatever fixins. I marinated one once, threw it in the back of rhe fridge and completely forgot about it... well about 36 hours later it was all brown, looked like it was chemically cooked and all the muscle fibers were separating, was melt in your mouth after cooking

You're pretty spot on on almost everything... BUT the portion where the chuckeye meets the ribeye is called the "center cut chuckeye steak", the standard chuckeye steak is just any portion of the chuck cut to an inch.

But the center cut chuckeye is the best steak that no one knows about (except cutters/butchers), it still can frequently be had for 4 or 5 bucks a pound and is basically a small ribeye steak for a third of the price.

It's basically what flank/skirt/flatiron used to be before the public discovered those are good cuts....
