Contrary to your beliefs, a large part of the world is in fact not fit for our crops. It's why GMO's are a thing.
It's also the problem with deforestation, as our crops drain the soil of nutrients, preventing anything from growing there for many years.
Meanwhile cattle can live on grasses and vegetation (that naturally grow there) which are too tough for us to consume.

That's only a transistional issue that desolves after the first month of being vegan. I had more gasious issues when I went back after two months with fast food. In fact, I barely if ever eat processed meat anymore due to this. I don't eat eggs nor most of the meats anymore because the quality is so fucked. Even meat from the butcher has gone backwards.

Also, vertical greenhouses aren't that far fetched for the growth of food near cities. A concept that is less far fetched than keeping up with the growth of meat consuption.

Not to mention the quality of said meat that is fed anti-biotics, which then is inside this food what we, on our turn consume. I like how the controversy exists around GMO vegi's as oppose to what our cattle gets fed.
