I can't find any nice games these days that seem interesting. Most of them are hyped up mediocre piles, others are shit and the good ones are all continuation(remakes) of other games we've all played before.. which is boring.
Is there anything new out there that doesn't suck and isn't market saturated?

I'm with you. FFXV was shit considering all the time and effort. The UI, the writing, the settings and mechanics all outdated. All that's out there is CoD, Assassin's Creed, remasters and remakes.
