Why am I writing here?
Because I'm scared.
I am so scared.
I knew jack shit about diy 3 years ago.
Now I am about to change the whole piping system for a set of apartments.
I know I have to, because nobody else will.
I actually really want to.
This is my dream. Well, a part of it.
Yet I am scared.

I have a similar, although smaller, story.
I had no interest in cars at all until I passed. even then all I could do is drive them. Then one day, I impulse bought an almost stock R33 Skyline.
Over the next 18 months I installed a front mount intercooler, new turbo, rims, rewired the rear lights and a few other bits which culminated in doing a full auto/manual conversion.

Long story short I did a whole lot of learning during that time. Enough to know I don't know jack although I can do most basic mechanical stuff.
But I am still full of fear. I know the theory and I know I am physically able, but I'm still scared to do it.
I replaced the valves and stem seals on my friends bike a couple of weeks ago and I was the experienced one (?) somehow. It all went without a major hitch, I put on an air of confidence but the whole time I was thinking 'fuck what if I break it!'
I now have a Toyota Chaser JZX100 and feel totally unqualified to own a car of this caliber, but I still keep on doing it. Same as everyone out of their comfort zone.
But life is about pushing boundaries and learning, right?

Pex is crap, usually use it for running a new line for outdoor use. Otherwise codes prevent Pex on large scale use.

Way cheaper, easy as fuck to install, will burst after copper does when it get's cold. Flexible, easy to route. If you're installing it properly there really aren't many main disadvantages to it...

OP gather your courage and do it.
But dont be too pridefull and know when you are messing up. Everything can be fixed, as long as you have a standard. If you make a half assed job and call it a day, then you should be scared, if not, then no problem.
Even if something will go wrong, you can always fix it. Just take it slow and be carefull.
You know, the usuall, measure twice cut once, think before you act stuff applies.
