I know this is bait, but just to cut everyone off, the truth is that at 135 degrees the muscle tissue starts to break down and become super tender, the fat turns liquid, but there's no significant reduction in moisture or destruction of the tissue.

Overcooking a steak turns it into something else, you could just eat a salty bean paste pressed into a steak shape and get the same experience. But a rare steak is just undercooked stringy flesh. Cook your steak sous-vide to 135-140 and then pan sear it for color if you want the perfect steak experience.

OP, for your steak to be cooked properly, the marbling in it must be cooked down to add flavour to the steak, additionally, fat needs to be rendered. Steak requires different temperatures depending on the cut to achieve this. Some steaks such as Fillets have extremely low amount of marbling and fat and can be eaten Blue or Rare and are delicious at that temperature as those particular cuts are so tender that they can be carved with a spoon. Higher marbled cuts such as a Ribeye require a bit more work, MR-M to achieve this. You must also consider whether the steak is dry or wet aged, whether marbling is higher than normal such as Wagyu beef or whether the cut might be grain or pasture fed which can make it leaner or fattier.
