I believe if there is a ".nomedia" file (just create a blank file with that name) in a folder, it'll be skipped by media scans. You can also name the folder starting with a period, e.g. ".fluffyabuse", which will hide the folder, though I think you still need the .nomedia file to avoid scans. You'll need a file manager that can see hidden files. I recommend Mixplorer, it comes with a built-in viewer, has an option to see hidden files, and is root aware. It's also free, though you have to get it from xda since I think it's not in the store. Lastly, you can get an app to block access to file/image viewers. I use Boost+ since it came with my phone, but you can probably find something better if you look.
