The dragons represented aren't entirely magical.
Sure, they aren't physically possible either, but they're still mainly just giant flying lizards with thick skin.
And the Japanese military isn't shown as being the best, they're just the only one's with access to it, and if you don't think small squads of modern weaponry couldn't devastate medieval troops, you're missing something. The show has a lot of faults, but that's a skewed perspective.

I don't think much anime was specifically geared towards adults (there are some, but they aren't very popular at all).
Blue Gender seemed more towards older teens.
Problem is economics. It usually takes more money to produce quality an adult would expect and the demographic is smaller, so it's a lose/lose for studios.
Sucks.
