You are going to smell of chip fat 24/7. We helped refit a chip shop and there was literal blocks of fat under the range, just years and years of oil buildup that you can't clean cause the range is bolted to the floor and can't be moved. Also seeing fish and chips everyday will make you hate it, maybe not soon but eventually.
