The human body is a lot more resilient than people realize. It's possible to eat veggies that have been out for days without getting sick, meat weeks passed expiration, and things being kept at improper temperature for food storage.

We have immunities for a reason and they're generally pretty effective. I once ate lunchables about 3 years passed expiration without realizing, they tasted fine (all the salt and preservatives) and I didn't even get diarrhea.

The worst thing people get from meal like that is usually one diarrhea poop and that's it.

You gotta consider 200 years ago people would salt the shit out of meat and keep at room temperature for months eating it. They'd fry chicken and keep it in room temperature eating it for a few days.... so a salad bar not quite cold enough is no major threat. But I'm sure they get several violations from the health inspector....

The only way people without compromised immune systems will get seriously sick from food is if it's laden with parasites and undercooked or in a state of active decay (and you'd know it, it will smell like death).
