Because populations tend to stay somewhat homogenous as they're all banging each other all the time. Differentiation requires two populations that won't or can't bang any more. Usually because of living elsewhere and having the population between them get killed off, or there's a river or something.

Even then the species can often bang right back together. Eventually they'll be able to bang, but the genes won't mix to make a viable offspring, or it will be sterile ( like mules ). At this point, full speciation has occurred, and they'll only further diverge from that point.

Put a group of humans on another planet for a couple million years and we probably won't be able to bang them any more. But the change will be slow, as the whole population moves toward unbangability.

It's not like a monkey popped out a human one day, it banged its human sister and humanity was born. It was generations and generations of small changes.

At no point would there be a visual difference between parent and child. Only over tons of time and the whole population shifting. ( if there was a large difference, the thing would probably be killed or ostracized and would never mate. basically, think of a monkey version of you )

put simply, the array of life we see IS the in-between species that are currently doing well. Also the picture is stupid, the array of animals shown are more like cousins, not the fathers, and fathers, fathers, etc.
Think of it this way, once you get to something that is unexpectedly beneficial you could get a huge amount of success of a particular species with a particular trait. The steps up untill air-breathing aquatic life were only beneficial enough to give the creatures a very small niche to inhabit. But eventually the lungs become properly adapted to land and suddenly you get a very successful creature that can be found as fossils (simply due to the extreme success of that creature at the time). Then the next big thing could be the body finally fully sealing itself and not loosing moisture all the time. Suddenly (not literally suddenly, but suddenly from an evolutionary record timeline) this new creature can inhabit a huge area, a new niche, and does really well. It dominates the unclaimed land. But the steps before were only a little beneficial compared to this, and just allowed the animal to move further around, while still having to have a good water source.

Really to understand it you need to think about the natural environments that caused segregation and divergence before humans screwed things up. Because thats a key, stopping the kind of similar from breeding. Then you get slight differences like skin colour, patterns, features, etc. And eventually, after a LONG time of separation for whatever reason, things will naturally differ anyway. Eventually the smaller eyes help some particular eskimos to live in the snow, and the wide eyed humans there dissapear (the in between humans if you will). Where in hot sunny regions the skin gains melanin and becomes dark for protection. In this anaolgy you can trace the evolutionary path, knowing that the skin slowly changed, and the eyes. But in a million years, fossils will only show distinct species

Were talking about many millions of years of evolution, some species lasting for millions of years and some only for say 100,000 like us so far. up untill we dominated we had many similar cousins in similar niches, And we have some fragmented fossils of these guys but it is still really rare, and thats just in the last million years. Fossilization is a very rare process, that is important.
So if you ask why the "in betweens" dont show up, it is both because they werent around for long enough or at the right times for fossilization to occur, and that they are there in a way, sometimes but not all the time, you just need to read up about it because most fossils arent popularised, they may only be partial and usually they are trickily grouped into most-like.

The word ‘theory’ in The Theory of Evolution does not imply invalidity, scientific theories have been proven and are almost unanimously accepted in the scientific community.

A scientific law is a statement about an observable result that is the same every time. A theory is an attempt to explain the cause behind that result happening.

The theory can change or be supplanted based on new understanding, the law is the observable result and should not ever change unless it wasn't legitimately observed in the first place.

All young Earth creationists are under the impression that if one single aspect of biology is unknown, poorly understood, or just not mentioned in a discussion, that it automatically means evolution is entirely wrong, and therefore Biblical creationism wins by default. Christian creationists are a lot more clever in many ways than Muslim ones are. Christians have had like two centuries of experience dealing with skeptical criticism of their beliefs, and they understand that simply claiming shit to be true don't fly, so they've learned to get creative, and at least try to make shit sound logical, and come across as being somewhat polite and respectful.

Muslim creationists on the other hand tend to be from societies where questioning any aspect of Islam is punishable by death, so they usually won't bother to try and sound logical, or polite. They don't play games of convoluted mental gymnastics, because the very idea that there can be genuine debate over their beliefs is completely foreign to them. They don't mind coming across as complete imbeciles. They are a lot more entertaining to deal with because of this. Online of course. Might be a bit deadly to do it face-to-face.

Old Earth creationism does exist. The Catholic Church for example accepts evolution, believing it to be the manner of creation. Young Earth creationists (at least within Christianity) are actually in the minority. They are just a very vocal minority.

Look up St. Augustin e'er views on biblical literalism. He wrote a book specifically on why Genesis should not be taken literally. This was of course long before evolution, the coppernican revolution, pretty much the entirety of modern science. Still even in his day, scholars recognized how silly it was to read Genesis literally.

Also, if you want a real mindful, Google Hindu creationism. They believe in an old earth. A very, very, very old Earth. They believe humans have existed for trillions of years. As with Christian creationism (young Earth, that is) , the Hindu variety is considered fringe within the broader faith too.

I'll give you two examples of human evolution that happened relatively recently. Lactose intolerance occurs in most humans after breastfeeding age, because spending energy producing energy to make lactase enzyme is a waste if you don't use it after breastfeeding. However, less than 10,000 years ago, some humans in neolithic europe had a mutation that allowed them to continue producing lactase enzyme, which allowed them to gain a higher level of survival, as they could obtain the caloric benefits of milk and dairy products. This eventually became a feature of most of the european population.These are things that are readily available to see in human DNA.

But this is not a dog being born with heat vision. It is a simple genetic anomaly that was advantageous. Over the course of millions of years, individual heritable traits survive in continuing generations simply because they confer a survival advantage. The kinds of changes you are talking about are expressed across entire species, through the accumulation of millions of gradual changes, over millions of years.

The fact of evolution is that evolution happens. Its not a theory, it happens, it can be shown and has indisputable evidence.

The THEORY of evolution is the current EXPLANATION as to WHY evolution happens.
IE natural selection and random mutations leading to the evolution of species.

Gravity is a fact. It happens, you cannot argue it doesn't when it clearly does.

However, the theory for gravity (general relativity etc) is the theoretical explanation for its occurrence. Both of these theories are very good explanations and have an insane amount of evidence supporting them.

Stop calling theories facts, and stop mixing up facts with theoretical explanations of them.
