If you want to, start with WK11 like you said and go to the big events. Personally I recommend watching G1 in the USA and the final 3 days of the G1. It gives you a good overview of the wrestlers.

Does NJPW have categories based on specific wrestlers? I'm wanting to watch a bunch of Great Muta matches, but it would be a pain working through all those runes to find the old 90s matches

It's pretty much the best idea, once you're done catching up with current events you can start working through past Wrestle Kingdoms to get an idea of how things changed over the years.
