Both of the Elimination Chamber matches from No Way Out 2009, partly because of Edge's shenanigans that night. Both matches were amazing, and everyone involved (even Mike Knox of all people) did great.

Everyone talks about the triple threat with Daniels. No one ever talks about this match. When it is mentioned it's agreed it's good. Maybe not underrated, but certainly under-referenced and under-appreciated.
I think it's clearly better than the triple threat too.

At Fully Loaded 2000, Rikishi and Val Venis had a fucking amazing cage match that nobody remembers.
A runner up would be the third TLC match that for some reason aired on a random Smackdown in 2001. It ranks up there with the first two in terms of insane bumps but since it wasn't on a PPV it ended up being a forgotten classic.
Raven getting thrown through that window was an underrated holy shit moment
