You have to appreciate that wrestling as a whole was a lot more violent 10-15 years ago. Seeing your favourite wrestlers cut open and gushing blood was a) normal and b) a really effective tool in the arsenal of a wrestler to aid him in telling a story.
As ECW folded and WWE later moved away from this style of presentation (the reasons for which are pretty obvious and don't need rehashing) it became more niche and CZW was one of the places where you could still see violence and blood loss and they became famous for it and they built their reputation on Deathmatches. And because a significant amount of wrestling fans still wanted to see this in matches, they had an audience.
It must be weird as a more recent fan to come into the industry and see more extreme examples of blood-letting but it's something we saw frequently until not too long ago and it shouldn't be written off as mindless blood-lust. Like most things in wrestling, when done properly it's an artform.
