Lucha Underground is different enough to entice even casuals to watch regularly. It also helps that the wrestling, the editing, the production and story are pretty fucking great too.

Being shorter really does help.
It's one of WWE's failings that nobody ever highlights. A weekly 3 hour show, rammed with every semi-established name is just silly.
Hour-longs like LU/NXT that DON'T go out of their way to showcase their entire roster every week benefit in the long run, because it makes every time the big names do show up that much more meaningful.
It also lets them emphasize the development of the lower-carders by giving them more frequent reasonable Main Event slots.

It embraces how ludicrous wrestling is with it's storylines and puts it in a seasonal tv format, this is the only way wrestling can work in 2016 and not look stupid. The writing is good and the production quality is high, it's much more creative than WWE.

Boyo, everybody complains about Raw's 3 hours. Triple H even said himself he'd cut Raw down to 2 hours if he could. They can't because the three hours provides too much ad-space that the money is worth the drag for Vince and the other corporate monkeys.
