On a more practical note: their backs are designed to be flexible, not sturdy, and thereby would not make a good mount.
Also, imagine having to feed that thing. When you're in a war your supplies are very limited. Herbivores have the advantage of being able to graze while they move and thereby sustain themselves without needing a lot of feed supplies. Imagine having to keep feeding a huge group of hypercarnivores. You'd have to raise and bring along and control and protect a herd of extra animals purely for food.
Massive carnivores are ace on the cool factor but very impractical as war beasts.
