I'm pretty sure rats and larger rodents can be litter trained.
I've kept mice before, but kept them in the cage, and they kind of just did whatever, might have had a certain corner for it tho.

I was gonna say this. Probably one of the least offensive poop smells too. The more protein, the smellier the poop so herbivores are good. Rabbits got a sort of manure smell but much more suddle since it's so small. Also, can be harvested as fertilizer.
