Our trainer had a pack of coach dogs and would use them in this situation rather than attempt to do it themselves. And it would be done in a controlled manner like the coach dogs would get beds and access to food/toys in a "class" for the dog being socialised into canine social structures.

Neither, up until he kicked him like a faggot. That serves no purpose in dog training and did more harm than good if he was truly trying to bring the dog back to the light side.
If anything - in an extreme situation - he should have grappled the dog to the ground and held him there until the dog understood the fight was over.
But this wasn't that situation. the dog clearly took a chomp, then backed away. This was a warning bite. You get a warning growl, a warning snap, a warning bite, then your shit gets wrecked. he should know better than anyone that the dog was communicating, and what was being communicated.
I lost all respect for him when he kicked that dog. You don't kick fucking dogs. honestly, people. I have 2 great pyrs, weighing in at over 300 pounds together, and I will push them out of my way with my knees all day long to reinforce that I don't yield to them, but i've never fucking kicked them. Who does that?

Shelter dog.
We had a lab for about 8 years before doing a Wisdom Panel on it. It was part Chow. We never knew. Once we got those results, we could instantly see it in his face. It was really obvious. We missed it because it blended pretty well and Chows are a breed that hardly anyone has a lot of experience with.
He was fairly aggressive, but raised well so it rarely came out.

I'm that guy. My 3 year old male was 182 back in February. My female is still growing, but passed 120 in June when she got her 2nd rabies shot. So around 14 months or so? This is lean, by the way.
Pyr owners have good communities because they are work dogs, and we exchange tips and advice on that (unlike here, where we just argue about dog food). And from what I gather, most males will go over 150 and females over 130.
Still on the low-end of giant breeds, like >>2271073 said. By the pound only, they're about the same as Danes but any mastiff or st. bernard or a dozen other breeds will outclass them.

I am on the dog's side in this, but I will say that whenever hosts like this are trying to constantly narrate shit for the camera, they are not at their best. They are multi-tasking instead of committed. And any animal can see this, as well. It draws confusion because the animal isn't used to someone messing it while talking to someone else.
You get the idea. It's just a bad idea all around.
