It's like lean beef with a slight gamey flavor. That sourness be a dealbreaker for some people, so I can understand the reports of it being bad even if I personally like it. It's also surprisingly tender for such an active animal.

They don't spook easily, they spook as much as any other horse.

Clydesdales are the most intelligent of Horse breeds and very patient.

It just looks like they scare more coming from such a huge stoic animal.

Clydesdales are actually quite chilled horses. Of course any horse can be startled, but they're one of the cold-blooded breeds which tend to be calmer and less prone to spooking compared to hot/warm blooded breeds. Unfortunately, this also means they're not particularly fast, but it is pretty fun when heavy horses shift into top gear as it's like riding a fucking tank, would definitely recommend it.
