Do you have any source to back that up? They're healthy, and still the running/hunting machines they were really long ago.

In-breeding perhaps, but greyhounds are probably one of the few breeds that are still bred for performance first and foremost. So if you had a dog with some mutation/some interbreeding that might improve sprint performance I don't think you'd have issues having it become successful on the race track.
