You don't need all that power to hunt and a smaller bow would be handier in the woods, but accuracy is not a concern.

A moose has a similar build to a horse, and if this knight is like the image with full plate armour and a long sword (I assume its a long sword due to the long handle and narrow blade) he would kill the moose in one quick slash, because horses would often have this fate while charging the knight would slice its neck killing it and throwing the solder off it. So it would take a single knight easily.

I assume that if Nessie's exist in small numbers in Loch Ness, they're likely some Elasmosaurus who found themselves up a Scottish channel when the water levels dropped and they had no way out, the Plesiosauroidea mostly stayed in the open sea however they have also been known to swim close to shores so I don't see this as being impossible.
I would say 50 knights spread across at least 8 medium vessels and they would have to work quick otherwise it would likely dive and they would be spending the day fishing

Plate armour is about 30kg, a sword is around 2. A gorilla can easily lift a large man plus arms and armor like you would a baby.

You seriously underestimate the pulling strength of apes, look some videos on youtube.
You also underestimate the protection given by the thick fluffy hair which would make connecting blows properly fairly hard, but mostly the speed and agility of the gorilla which would be on top of the knight in an instant striking like a whirlwind, and apes naturally go ripping at the face and groin which happen to be the weak spots of the armour.
Let alone the fact that apes are known to pick up rocks and branches to throw or bludgeon with.

A knight with a sword have range advantage and its fur is not made out of steel so either the knight fatally wound the gorilla before it reaches him or the gorilla get to the knight with a wound but in wrestle distance the knight is at gread disadvantage and will be wrecked.
