Has anyone ever shipped a pet before? I'm going to be moving next year and I have a cat that I want to take with me, and I'm trying to explore other options besides taking him on the drive with me, since it's going to be about a 2500 mile drive.
How much does it usually cost? Are there any services worth recommending? Or should I just take him with me and try to find pet-friendly hotels along the way?
Has your cat ever been in a car before? How did they react?

When I moved last year I just took him with me in a Pet Taxi, but that was a straight shot trip, about 10 hours. I stopped and let him out regularly of course, but for most of the actual driving he just slept through it.
This next move will be like three days, and at least two of those I'll be stopping and staying in a hotel.

How old is your cat?

He'll be three years old when I move.
With how well he did on the last move it sounds like he will be good for this one too. If you're worried get him some calming treats or something

This
Your cat is a really convenient age as well.
The move might be stressful, but I'm sure he'll bounce back in no time.

Flying them poses more risk then just driving with them.
My brother girlfriend (now ex) flew the cat across Canada when she left him. His ear drums ruptured from the pressure.
It's seriously no big deal to drive the cat. Pet friendly hotels are so common this day.
Holiday Inn, Best Western, Hilton, Days Inn, Comfort Inn all big name ones that are okay with pets. You're just required a deposit before, in case they ruin things. Collectively the 2-3 deposits you will pay is cheaper then shipping an animal, via air, or carrier.

Okay, that's good to hear. I was under the impression most hotels didn't allow pets.

I'm not OP
But I took my cat to the vet last year and she was howling the whole time, she didn't like it at all. Thankfully, I only live like two miles from the vet, so the trip was really short. If I'm in OP's spot where I have to move across the country, it's going to be a really traumatic experience for her.
I think I would just risk having her sit on my lap / freely roam the car. She didn't like being in the pet carrier.
