I went to the Mid-America Bonsai Exhibition today at the Chicago Botanic Garden. I'll dump the show and the garden's private collection. The exhibition trees are indoors, and the garden's collection are the outdoor trees that have a frosted glass backdrop.
Apologies for the low quality, my camera isn't very good.
I'm leaving out the few trash trees that were in the show that I didn't even bother to take pictures of.

How are the trees graded? I see the top one has an award.

There's a bunch of fundamentals that the judges are looking for in terms of how the tree is styled and cared for, but past that it's really up to the judges.
The price for a finished tree can range from hundreds to tens of thousands of dollars or more, depending on complexity, size, and usually most importantly, age.

I forgot to add, there are usually different categories that are being judged as well. Novice, open, and professional.

If anyone ITT thinks bonsai look like miniaturized normal trees treasure that, if you look at too many of them and trees in general with interest and affection (and you're me) they look more artful and deliberate but thoroughly unhealthy and non-magical

Accent plant. It's common to try to have three visual points of interest per display. Could be tree, accent, wall scroll, for example.

This tree was made by wrapping a bunch of saplings around a carved piece of wood. Eventually the saplings bonded together.

I agree with you. I think you could just take any grown tree tree it way down and put it in a small pot until its root bound beyond belief. If it survives you have a magical bonzai. If you did it enough you would get some survivors and have bonzais in a fairly short amount of time.
But to OP I appreciate your pictures. And have no problem with them. I just think its a little weird. I went to an african violet show so many asians. It was pretty neat.

you don't want it to get root bound, that will kill it.
you're actually dwarfing it by keeping the roots cut back, hence the small pots.

If you wanted to start a bonsai, you can get one online for like $20, they survive the mail surprisingly well.

To be honest, you're probably going to want to let them grow in the ground for a couple years at least before starting with them. Bonsai from seeds take a long, long time. That's why many people start with stock. So grow your plants in the ground or large containers (read: plant production in containers by Whitcomb).
A good book on bonsai techniques if you can find it is Bonsai Techniques I by Yoshio Naka, but I don't think it's in print anymore.
The best way to start though would be to find a local group that is doing it if you can and learn from them.
