I'm growing a cutting of pothos/devil's ivy in a jar of water. The plant is doing fine but these strange white growths appeared on the roots.
Is it fungus, or just new roots sprouting?

2 things:
1: Was it in soil before you put it in water? Because that looks like vermiculite particles or something like that
2: Epipremnum aureum produces aerial roots that look like corky knobs when they first start out. This looks like those roots (although a bit weirdly), just underwater.
I am doing the same thing with pothos, but unlike yours I cannot notice any new root in the twigs, they have been in the jar for more than 3 weeks now, some twig died but some other are still green.

1) Nope, the roots were smooth before (I usually end up planting in soil once they've grown some roots, but I wanted to try growing this one in water
2) Yes, I've seen some of those aerial roots, and used them for certain cuttings.
I think it's just some root overgrowth or something weird like that -- in the second pic there's a new root growing from one of those nodes.
I'll give it some time and see if the condition of the plant changes. Thanks!

Make sure you include some root nodes (pic related) when you are growing the cuttings in water. The roots will grow out of those, not out of the stem
It's very easy to root cuttings, and you don't need hormone also
